Thanks to the starch they contain and release, it is possible to cook them differently.

Why waste using too much water or multiple utensils when we can smartly cook our pasta in the same pot? Certainly if you prefer to eat them “plain” with just a drizzle of olive oil or butter, the classic method is unavoidable. But, since most pasta recipes are served with a tomato sauce or a good carbonara, you can take the opportunity to cook it directly with the sauce. Just thin this sauce further with a little water and add the pasta to it. As the starch is released, the sauce will thicken at the same time. And apparently, according to Julie Andrieux, cooking pasta in tomato or cream sauce provides a much better flavor than what you get with traditional cooking.

How to thicken a sauce that is too runny?

Thanks to the starch in the pasta, there is no need to thicken a sauce that is too runny with flour. Especially since the latter tends to make them more pasty. You just need to stir the sauce regularly. And if, on the contrary, it is too thick, to prevent the pasta from being too soft, you can add a little water and reduce the heat. Cook for 10 to 12 minutes, stirring well to prevent sticking to the pan.

A little tip: instead of flour, you can add a little milk to naturally thicken the sauce. It will also serve as the base for a cream sauce. Just bring to a simmer and stir often so the milk doesn’t burn.

These are the steps to follow:

  • In a gratin dish, properly set up your raw pasta.
  • In order for them to soak well and swell well, they need to be carefully covered with vegetable or chicken broth.
  • Decorate your plate with the ingredients you want: cherry tomatoes, mushrooms, aromatic herbs and spices. No need to salt, the broth is already enough.
